MINI TACOS

This simple party food or as I like to make them for late night snack food is amazing. I found the idea on Pinterest and worked with it.. so enjoy.

INGREDIENTS

  • Won Ton Wrappers
  • Taco Seasoning
  • Ground meat
  • Cheese

METHOD

place won ton wrappers in a muffin tin, fry up your ground meat and add your taco seasoning. place the meat into the won ton wrappers and add cheese bake for 8 mins at 350 and your good!

NOTES

these are simple to make for a party but don’t forget you can make it more fun by adding salsa on top as well YUM!

also feel free to substitute whatever you wish.  my meat is veggie meat as an example!

ARTICHOKE & CHEESE DIP

Tonight is a movie night for me. Why you ask? simple boyfriends out of town and a day off! you know what else this means. DIP TIME!

my new found love is to making dips and I have made this dip twice now and first time wasn’t so good (ask the boyfriend lol) to much Parmesan cheese.

so next time you have a movie night or a pot luck you know what to bring. it’s super easy and fast to make.

FINSHED ARTICHOKE & CHEESE DIP

INGREDIENTS

  • 2 14 oz. cans of artichokes (mine where marinated in oil some people say use plain)
  • 1 cup of freshly grated Parmesan cheese (I had a package of it)
  • 1 cup of freshly grated Mozzarella cheese
  • 1 cup of mayonnaise
  • Salt and pepper

METHOD

1 Drain the artichokes from the can. Coarsely chop them ( I used my Magic Bullet you know the thing a man invented for the kitchen but thought about sex the whole time).

2 Combine chopped chokes, Cheeses, and mayo into a oven-proof serving dish.

3 place in oven for about 20mins depending on your oven on 350 degrees until warm and brown on top.

Serve with toasted, thinly sliced French baguettes, or crackers.

NOTES

A simple note would be to mix it up. some people like to add greens to this dish or even garlic. go with your feelings and tastes. some people often use Cream cheese instead of mayo.

FOUR BEAN SALAD

I made this on a whim the other night. I had the beans and the basics. but with a Bean Salad you can add and not add different things as you want. like different beans, some people add peas, celery, carrots etc. feel free to explore the possibilities with this recipe and play with it. it’s simple and isn’t hard to do. it  takes 10 mins to make.

INGREDIENTS

  • 1 15-oz can Chick Peas, rinsed and drained
  • 1 15-oz can Red beans, rinsed and drained
  • 1 15-oz can Lentils beans, rinsed and drained
  • 1 15-oz can Lima beans, rinsed and drained
  • 1/3 cup apple cider vinegar
  • 1/3 cup granulated sugar
  • 1/4 cup olive oil (I used vegetable oil)
  • 1 tablespoon of whole mustard
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper

METHOD

1 In a large bowl, mix the beans, and everything else

2 In a separate small bowl, whisk together the vinegar, sugar, olive oil, salt, and pepper. Add the dressing to the beans. Toss to coat.

3 Chill beans in the refrigerator for several hours, to allow the beans to soak up the flavor of the dressing.

Yield: Serves 4 to 8.

WHOLE WHEAT CRANBERRY BREAD

I found this recipe online because I had a bunch of Cranberries laying around the house. I choose this recipe because it was simple, healthy and quick to make. when I popped it out of the oven it smelt so good and tasted amazing. if you do this recipe let me know!

Whole Wheat Cranberry Bread

  • 3 cups whole wheat flour
  • 1 ½ cup sugar
  • 2 ¼ t baking powder
  • 1 ½ t salt
  • ¾ t baking soda
  • ¾ cup butter
  • 2 eggs
  • 1 ½ t grated orange peel
  • 1 ⅛ cup orange juice
  • 3 cups fresh cranberries, chopped

Preheat your oven to 350 degrees. Sift together flour, baking powder, salt, and baking soda into large bowl. In a separate bowl cut butter and sugar together until the mixture is crumbly. Then add to the other dry ingredients and mix together. Next, add eggs, orange peel, and orange juice all at once; stir just until mixture is evenly moist. Fold in berries and spoon mixture into greased bread pans. Bake for about 40-50 minutes or until toothpick comes out clean.
